Just trust me, I’m happy to see this black bean deliciousness. I love the idea of adding beets! It’s something I’d never thought of before but the combination sounds perfect. Well, seeing as President Obama and the First Lady supposedly wouldn’t let them be planted in the Whitehouse garden some strong precedents (haha, no pun intended) have been set. That said, to me it’s all about how you cook them. My parents did a good job of getting us to like them. I think butter had something to do with it, and freshness – nothing beats (haha) a totally sweet tasting and creamy soft nicely boiled/steamed beet with some butter on it!

I remember her saying “If you only remember one thing from 4th grade Language Arts it should be this: a lot, not alot.” Makes me wonder what my students will remember that I said in 35 years… hopefully something in Spanish 🙂
