I’m terrible with recipes. I’m trying though, I have a couple of newly purchased cookbooks that I’m determined to cook through over the next few months! I can definitely understand how the eggplant and cheese would be ‘meaty’. Eggplant is awesome like that… it just soaks up whatever deliciousness you coat it in! Cannot wait to try this!

We’ve made it so many times we no longer look at the recipe (I know that’s how you tend to roll). It’s interesting too because it cooks up tasting somewhat meaty, the combination of the eggplant and cheese is just so great!

I love anything with eggplant or courgette in it. The herbs and the cheese on top look lovely. This would seriously please my husband (despite his penchant for meat!).
