I am not much of a fan of the real hoppy beers because I don’t like bitter tannin tastes, so your “amber and malty” sounds delicious! I hope it turns out well and will be waiting to read your post telling us how it tastes! Also, I have never heard of the term “Ethical Omnivore” before, but I guess that’s what I am also. Although I love eating a good steak once in a while, I am also aware of what is required for me to have that steak! Once we move up to our homestead (soon) we will be raising our own meat chickens, egg laying hens, and will also hopefully have a small hydroponic system to raise trout. We won’t raise our own beef, but will hopefully find a farmer locally who raises grass fed, organic beef! I love that picture of you and the kids – so cute! Have a wonderful May!

Maybe many of us fit this definition of eating. Hopefully blogging is a way of promoting it and bringing it to more people’s attention. So many blogs seem to stray to some extreme to fit a niche – vegan, gluten free, paleo, etc – but it’s good to see more like ours that are presenting less extreme types of eating, while being, as you say, great for both health and the environment.

I’ve never really thought about my own categorization as an eater but Ethical Omnivore would be right. Aaron and I eat meat about twice per week… I often try and make plant-based meals for the majority of the time as I do see it as being great for both health and the environment. You guys are doing a great job (and for you and your wife instilling these values in your children; I hope that Aaron and I can do the same thing one day!). As for the sap/beer making/spiles (yes I did read Catching Fire!), good luck with your maple sap beer! I’ve never heard of such a thing, living in Australia, but it sounds delicious. Sorry to hear about the tap leaks. I guess you’ll be an ‘old pro’ next time 🙂 Always love reading your posts Jon, hope that you guys had a wonderful Easter and that the weather is continuing to transition to sunny goodness!
