I love how much thought you put into this sandwich. As a Christian who grew up at a Catholic school, I am all for a healthy dose of symbolism in food… this is a pretty great alternative to Hot Cross buns! I adore beetroot, I’ve never eaten it with egg and cheese but it sounds good. Hope that you guys had a lovely Easter – I am aware that it was ages ago now but I am just getting around to catching up on your foodie goodness!

This sandwich looks and sounds really good! I love beets. I think I might try pairing it with a nice smoky gouda – strong enough flavor to hold it’s own, yet nice and ooey-gooey when it’s grilled! I hope you and your family have a wonderful and joyous Easter!
