Hi Melanie,

Thanks! That sounds like an awesome idea to try it with zucchini, and I’d love to hear how it goes. I was actually considering that same option at work the other day (Maurita’s Kitchen at the Working Centre). We didn’t have enough eggplant for the whole eggplant parm, but then I saw a bunch of zukes. In the end we did something else but it would have been cool to try it!

Your adaptation of Katzen’s Eggplant Parm looks great! I think I might give that a whirl but with zucchini instead – placed too big of an order at Bailey’s and now I’m on the hunt for delicious recipes.

In reply to Rona B. Thanks, Rona. We've made it quite a few times this summer, it's super easy and very tasty, especially with a nice runny yolk that becomes a sauce for the greens.
