My favourite recipe comes from Judith Finlayson’s Healthy Slow Cooker, it’s called Sweet Potato Coconut Curry with Shrimp. It’s a thai curry, prepares quickly, and tastes amazing – we’ve served it to guests who can’t believe it’s a slow cooker meal.

Hey Katrina, great idea using up the CSA veggies. We often do broth with the leftover chicken bones but I don’t know why we hadn’t considered doing a veggie broth, now we will, thanks!

It is a sanity preserver when life is busy. It is easy to fall into a rut though, making the same meals in it week after week, so I would LOVE to be inspired with some fresh ideas. Regardless, my favourite thing to make in the slow cooker is stock or broth… We save the ends of all our CSA veggies (or the odds and ends that fall to the bottom of the crisper and are wilting) and toss them into a slow cooker full of water, add a couple of peppercorns and make sure there is enough onion or leek ends, and if we have them, some bones from pastured meats, and let them simmer until yummy. Healthier, cheaper and less waste than any of the store-bought options. If we have extra, we just cool, add it to an empty freezer container and freeze until needed!
