I totally understand! It took me a while before I knew how to hone properly, but once I knew, it became a breeze.

I don’t know if this will help you as a reference for whenever you need to hone, but here’s an instructable I wrote not too long ago on honing:

Actually I always had an honing rod, I just didn’t use it much because I was unsure of its purpose. I’ve been trying to use it more regularly but still don’t always remember!

It does take some practice and patience, but eventually you start to get it. Although, it’s also nice to have the option to get your knives professionally sharpened. Seems like the place you went to did a pretty good job. Did you end up investing in a honing rod after the fact?

That’s actually the same place my original sharpener was from, I love Lee Valley! But if you have a whetstone it would be awesome to learn how to use it. Check out this free video from Craftsy, he demonstrates how to sharpen a blade with a whetstone.
