Preheat the oven to 400. Slice the beets and toss them in a bowl with a few glugs of olive oil.
Roast the beets on a baking sheet for about 20 minutes, or until they begin to get crispy on the edges.
When the beets are almost done fry the egg. Put the slices of cheese on one piece of bread, topped with the roasted beets, and then the egg. Top with more cheese if you like, then the other slice of bread.
Heat a bit of butter in a pan and fry the sandwich until nice and golden. Enjoy!
